Heirloom – Part 1 – Tomatoes
When I think of heritage vegetables, romantic notions of windswept hills and fields Sunflowers come to mind. I imagine a wooden table arranged with rustic linens and wine glasses, each capturing a ray of light and reflection the mouth was orange, red and yellow make a bowl of freshly prepared Caprese salad. There's nothing like the combination of tomatoes, basil fresh mozzarella and buffalo. Mix in a little olive oil, salt and pepper and you have the perfect summer to the gods. Of course, you can do with the normal tomatoes, but the difference in flavor is like the difference between cheese and cardboard. Heirloom tomatoes taste the exotic color and biodiversity for the life of the garden to the table.
By definition, a legacy is something handed down from generation to generation, in hopes of preserve the memory of a bygone era. In the case of heirloom tomatoes, varieties of 100 years are still in circulation today, thanks to the good old producer who has carefully saved seeds and give their children.
